I came across this delicious looking chicken dish on\u00a0<a href=\"http:\/\/www.the-girl-who-ate-everything.com\">The Girl Who Ate Everything<\/a>. Chicken, bacon, cheese, it sounded great. So I took off trying to give it my own outdoor cooking twist and ended up with something that tasted as delicious as it looked.<\/p>\n<p><!--more-->To\u00a0cook this dish, I started off with a marinade made of soy sauce, honey, Worcestershire sauce, minced garlic, and salt and pepper. I mixed all that together and added to a large zip lock bag along with the chicken breasts.<\/p>\n<p><a href=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0705-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5440\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0705-2-1024x682.jpg\" alt=\"Chicken with Marinade\" width=\"500\" height=\"333\" srcset=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0705-2-1024x682.jpg 1024w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0705-2-300x199.jpg 300w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0705-2.jpg 1442w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>While the chicken was marinating, for an hour, I also got a cedar plank soaking in water. The easiest\u00a0way for me to do that\u00a0is using a cooler that I have which is the right size to hold the cedar plank. \u00a0 I covered it with about\u00a04 inches of water and put a brick on it to hold it down. \u00a0Like the chicken, the plank also needed to soak for about an hour.<\/p>\n<p><a href=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0707-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5441\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0707-2-1024x682.jpg\" alt=\"Cedar Plank Soaking\" width=\"500\" height=\"333\" srcset=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0707-2-1024x682.jpg 1024w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0707-2-300x199.jpg 300w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0707-2.jpg 1442w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>While the chicken and the plank were soaking, I got to work on the toppings for the chicken. \u00a0I cut some bacon strips into small pieces, and started them frying in a cast iron skillet on my grill side-burner.<\/p>\n<p><a href=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0723-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5442\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0723-2-1024x682.jpg\" alt=\"Bacon Cooking\" width=\"500\" height=\"333\" srcset=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0723-2-1024x682.jpg 1024w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0723-2-300x199.jpg 300w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0723-2.jpg 1442w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>I also diced up some green onions, and some tomatoes from my garden. It's getting late in the season so it was nice to use them and they added some great color to the dish.<\/p>\n<p>After the hour was up I put the chicken pieces on my hot grill and started grilled both sides of the chicken.<\/p>\n<p><a href=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0763-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5443\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0763-2-1024x682.jpg\" alt=\"Grilling the Chicken\" width=\"500\" height=\"333\" srcset=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0763-2-1024x682.jpg 1024w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0763-2-300x199.jpg 300w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0763-2.jpg 1442w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>While on the second side, I took\u00a0the cedar plank out and put it on the grill, turning the heat down where the plank was. You want to \"season \" the side you'll cook on. \u00a0I've found that if I don't\u00a0turn the heat down I have a good chance that the plank will catch\u00a0on fire. Don't want that! \u00a0So down the heat went, and on the grill went the\u00a0cedar plank.<\/p>\n<p><a href=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0764-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5444\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0764-2-1024x682.jpg\" alt=\"Cedar Plank on Grill\" width=\"500\" height=\"333\" srcset=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0764-2-1024x682.jpg 1024w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0764-2-300x199.jpg 300w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0764-2.jpg 1442w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>If you haven't cooked with cedar planks before they can add a distinctive flavor to many dishes. <a title=\"Grilled Salmon on Cedar Planks\" href=\"http:\/\/www.outdoorcookingmagic.com\/grilled-salmon-cedar-planks\/\">Grilled salmon on cedar planks<\/a> is famous, but you can also do many other dishes for additional flavor including hamburgers, chicken, and vegetables. As the cedar plank steams and starts to smoke, your food will gather a subtle cedar flavor which adds another layer\u00a0of tastiness\u00a0to your dish.<\/p>\n<p>When the cedar plank was ready to go I flipped it over and put the chicken on top of it. \u00a0The idea here is to finish cooking the chicken on the cedar planks and then add the toppings that will be the capstone for the Monterey chicken.<\/p>\n<p>I monitored the temperature of the chicken and when I was getting close to 160 I slathered the top with a generous brushing of barbecue sauce.<\/p>\n<p><a href=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0766-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-5445\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0766-2-1024x682.jpg\" alt=\"Barbecue Sauce on Chicken\" width=\"500\" height=\"333\" srcset=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0766-2-1024x682.jpg 1024w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0766-2-300x199.jpg 300w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/10\/IMG_0766-2.jpg 1442w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>Next I topped each chicken breast with the diced green onions, the tomatoes, and the bacon. The chicken had a great flavor and the toppings gave\u00a0that little extra something to this dish to put it over the top. Delicious! Add to large zip-lock bag with the chicken. Let marinade for 1 hour.<\/li>\n<li class=\"instruction\">Take the cedar plank and put it in a container where it can lie flat (I use a small cooler) and cover with several inches of water. Put something heavy (a brick, for example) on it to keep it submerged.<\/li>\n<li class=\"instruction\">Dice the green onions and tomatoes.<\/li>\n<li class=\"instruction\">Cut the bacon into small pieces, add to cast iron skillet on cook on side burner on grill. You could also do over charcoal.<\/li>\n<li class=\"instruction\">When the hour is up, put the chicken on the grill and grill for 3-4 minutes on the first side. Flip over and grill the other side. While the second side is grilling, put the cedar plank on the grill and turn the burner down. This will season the side that you are going to cook on.<\/li>\n<li class=\"instruction\">After 3-4 more minutes, flip the cedar plank over and put the chicken on top. Keep the heat low right underneath the cedar plank so it doesn't catch on fire (it still might--just put out the flames and keep the heat underneath it low).<\/li>\n<li class=\"instruction\">Give the chicken a good slathering of barbecue sauce.<\/li>\n<li class=\"instruction\">Cook the chicken to about 160 degrees with the grill lid down.<\/li>\n<li class=\"instruction\">When the chicken is getting close to 160 degrees, top each chicken breast with the diced green onions, diced tomatoes, bacon crumbles and then a generous sprinkling of shredded cheese.<\/li>\n<li class=\"instruction\">Close the grill lid and allow the cheese to melt.<\/li>\n<li class=\"instruction\">'Serve and enjoy.
