{"id":5306,"date":"2014-08-17T08:17:01","date_gmt":"2014-08-17T15:17:01","guid":{"rendered":"http:\/\/www.outdoorcookingmagic.com\/?p=5306"},"modified":"2015-08-13T10:53:44","modified_gmt":"2015-08-13T17:53:44","slug":"rosemary-mustard-grilled-chicken","status":"publish","type":"post","link":"http:\/\/www.outdoorcookingmagic.com\/rosemary-mustard-grilled-chicken\/","title":{"rendered":"Rosemary Mustard Grilled Chicken"},"content":{"rendered":"<p>I've been looking at food blogs lately and saw this recipe for a rosemary chicken from <a href=\"http:\/\/www.tasteslovely.com\">TastesLovely.com<\/a>. \u00a0I'm always looking for tasty sounding recipes, so decided to try Natalie's recipe, but with a change--I would cook it on the grill instead of in the oven. \u00a0Food always tastes better when it's cooked outdoors, right? \u00a0So I decided to try <a href=\"http:\/\/www.tasteslovely.com\/rosemary-mustard-skillet-chicken\/\">Natalie's Rosemary Mustard Skillet Chicken<\/a>, but with my own twist.<!--more--><\/p>\n<p>The first thing I did was cut up the chicken. \u00a0I had bought a whole chicken and I needed to separate it into parts. \u00a0This isn't something I do very often, but what the heck, I gave it a try. Watching a YouTube video (don't you just love YouTube for things like this? \u00a0How did we ever get along before we had such resources?), I found out how to cut the chicken up. \u00a0Practice does make perfect, and my attempt was successfull, but not without some slightly mangled chicken. \u00a0Oh, well. \u00a0I'll try again next time.<\/p>\n<p>I brushed the chicken lightly with olive oil and then sprinkled with salt and pepper. \u00a0You don't need much olive oil, just enough to help the skin get nice and golden on the grill.<\/p>\n<p>Now, on to the grill! \u00a0I \u00a0turned the grill up and got everything nice and hot, then put the chicken on and turned the burners down. \u00a0There is usually enough fat dripping off that causes flames, so you don't need things up high.<\/p>\n<p>While grilling I often like to add a little smoke, so I prepared a small smoking packet, which is basically a handful of wood chips (which you can get at any stores, or here), on a small piece of foil. \u00a0Gather the ends up and seal. \u00a0Then poke a few holes in the packet and put in on the grill right over the hottest flame. \u00a0The chips will start to smolder eventually and fill the grill chamber with smoke. \u00a0That will add a nice extra flavor to whatever you are grilling, like steaks, chicken, pork, vegetables, peaches. \u00a0Wait, peaches? \u00a0Not sure about that one, but now I'll need to try it!<\/p>\n<p><a href=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Wood-Chip-Foil-Package.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5315\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Wood-Chip-Foil-Package.jpg\" alt=\"Wood Chip Foil Package\" width=\"600\" height=\"337\" srcset=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Wood-Chip-Foil-Package.jpg 600w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Wood-Chip-Foil-Package-300x168.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>While waiting for the chicken to cook, I got the spread ready. \u00a0Natalie's recipe has a couple type of mustards mixed with mayonnaise, maple syrup, and \u00a0fresh rosemary. \u00a0That sounded fabulous!<\/p>\n<p>I cooked the chicken until the the skin was nice and golden. \u00a0The next step is to finish the cooking in a pan on the grill, with some liquid that will eventually be used to add extra flavor to the chicken. \u00a0I have a cast iron skillet that I can use directly on the grill, so that worked perfectly. \u00a0If you don't have such a pan, get one! \u00a0What are you waiting for? \u00a0Just kidding. \u00a0A disposable aluminum container will work nicely as well, although I would add a bit more liquid in that case to help keep things from sticking and burning.<\/p>\n<p>I took the pieces of chicken off the grill and arranged them in the cast iron skillet. \u00a0They just fit!<\/p>\n<p><a href=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Grilled-Chicken-In-Cast-Iron-Skillet.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5311\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Grilled-Chicken-In-Cast-Iron-Skillet.jpg\" alt=\"Grilled Chicken In Cast Iron Skillet\" width=\"600\" height=\"400\" srcset=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Grilled-Chicken-In-Cast-Iron-Skillet.jpg 600w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Grilled-Chicken-In-Cast-Iron-Skillet-300x200.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Then I spread the mustard\/mayo\/rosemary mixture on each piece.<\/p>\n<p><a href=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Grilled-Chicken-with-Rosemary-Mustard-Sauce.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-5312\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Grilled-Chicken-with-Rosemary-Mustard-Sauce.jpg\" alt=\"Grilled Chicken with Rosemary Mustard Sauce\" width=\"600\" height=\"400\" srcset=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Grilled-Chicken-with-Rosemary-Mustard-Sauce.jpg 600w, http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2014\/08\/Grilled-Chicken-with-Rosemary-Mustard-Sauce-300x200.jpg 300w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Finally, I added 1 cup of chicken broth to the skillet and then a tablespoon of butter. \u00a0Natalie's recipe called for Chardonnay, but I substituted chicken broth instead.<\/p>\n<p>I put the skillet back on the grill and continued cooking until the chicken was at 160 degrees. The results were delicious.<\/div>\n<div class=\"ERIngredients\">\n<div class=\"ERIngredientsHeader\">Ingredients<\/div>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">4-5 lbs of chicken, cut up, leave skin and bones on<\/li>\n<li class=\"ingredient\">1 tbsp olive oil<\/li>\n<li class=\"ingredient\">1 tbsp kosher salt<\/li>\n<li class=\"ingredient\">1 tbsp coarse ground pepper<\/li>\n<li class=\"ERSeparator\">Mustard Sauce<\/li>\n<li class=\"ingredient\">2 tbsp spicy ground mustard<\/li>\n<li class=\"ingredient\">2 tbsp grainy mustard<\/li>\n<li class=\"ingredient\">1 tbsp mayonnaise<\/li>\n<li class=\"ingredient\">2 tbsp rosemary, chopped<\/li>\n<li class=\"ingredient\">1 tbsp maple syrup<\/li>\n<li class=\"ingredient\">1 cup chicken broth<\/li>\n<li class=\"ingredient\">1 tbsp butter<\/li>\n<li class=\"ingredient\">1 handful of wood chips (your choice or hickory, oak, pecan, cherry, apple)<\/li>\n<\/ul>\n<\/div>\n<div class=\"ERInstructions\">\n<div class=\"ERInstructionsHeader\">Instructions<\/div>\n<div class=\"instructions\">\n<ol>\n<li class=\"instruction\">Start grill heating.<\/li>\n<li class=\"instruction\">Put wood chips on top of a piece of foil, bring edges up, and fold together. Poke or tear holes n the foil packet.<\/li>\n<li class=\"instruction\">Put foil packet on grill grates over flame.<\/li>\n<li class=\"instruction\">Lightly brush cut up chicken with olive oil.<\/li>\n<li class=\"instruction\">Sprinkle chicken with salt and pepper.<\/li>\n<li class=\"instruction\">Put chicken on the grill, turn burners down.
