{"id":4082,"date":"2012-07-26T09:07:18","date_gmt":"2012-07-26T16:07:18","guid":{"rendered":"http:\/\/www.outdoorcookingmagic.com\/?p=4082"},"modified":"2014-06-29T22:28:29","modified_gmt":"2014-06-30T05:28:29","slug":"mesquite-grilled-steaks","status":"publish","type":"post","link":"https:\/\/www.outdoorcookingmagic.com\/mesquite-grilled-steaks\/","title":{"rendered":"Mesquite Grilled Steaks"},"content":{"rendered":"<p>Mesquite Grilled Steaks! \u00a0Sounds delicious, right? \u00a0And they are, if you do it right. \u00a0Of course that's always the case, isn't it? \u00a0Here's the right way and the wrong way to grill steaks with mesquite.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-4084 alignright\" title=\"Mesquite Grilled Steaks\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2012\/07\/562666865_73d73c3d89-300x200.jpg\" alt=\"Mesquite Grilled Steaks\" width=\"300\" height=\"200\" srcset=\"https:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2012\/07\/562666865_73d73c3d89-300x200.jpg 300w, https:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2012\/07\/562666865_73d73c3d89.jpg 500w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p>A few months ago, I got some charcoal briquettes going, prepped the steaks and got them sizzling over the hot coals. \u00a0Then I remembered that I had some mesquite chunks (not chips, the big chunks of mesquite) so I added a couple of chunks on top of the coals and grilled the steaks. \u00a0The chunks started smoldering and the resulting smoke added a wonderful smoke flavor to the steaks. \u00a0They were delicious!<!--more--><\/p>\n<p>That was the right way.<\/p>\n<p>Now the wrong way.<\/p>\n<p>I decided to do some mesquite grilled steaks again. \u00a0 I was at the store getting some steaks and I noticed some mesquite lump charcoal. These are different than the normal briquettes and can be wonderful to use. \u00a0They can add some flavor and usually burn hotter than the normal briquettes. <div style=\"float:right;margin:3px\"><a target=\"_blank\" href=\"http:\/\/www.shareasale.com\/r.cfm?b=631169&u=124118&m=52974&urllink=&afftrack=\"><img decoding=\"async\" src=\"http:\/\/www.shareasale.com\/image\/52974\/300x250_cookie_ziplist_green_start_your_.jpg\"  border=\"0\"><\/a><\/div>\u00a0So I decided to get them. \u00a0More mesquite would be better, right? \u00a0Turns out I was wrong. \u00a0Too much mesquite can give the meat a bitter taste. \u00a0Between the mesquite lump charcoal and the 4 pieces of mesquite wood chunks that I added on top of the coals, the result was a pretty bitter taste.<\/p>\n<p>Mesquite can be a great flavor and I highly encourage you to try a little bit when you grill steaks or chicken. \u00a0 But keep it light and don't overdo it. \u00a0A couple of chunks should be plenty. \u00a0Just add them to normal briquettes and let them smoke while you grill. \u00a0You will end up with some pretty delicious steaks.<\/p>\n<p>Good luck!<\/p>\n<p>Photo by http:\/\/www.flickr.com\/photos\/wwworks\/<\/p>\n<div class=\"signature\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.outdoorcookingmagic.com\/images\/scottsig.png\" alt=\"Scott\" height=\"35\" width=\"86\" \/><br \/><\/div>\n<p>P.S.
