\"Shish]I was heading up the canyon last week to do some cooking, including a Dutch Oven Strawberry Rhubarb pie<\/a> for the Outdoor Cooking Magic Challenge<\/a> and was trying to figure out what to cook over a campfire. \u00a0We have some beautiful spots just minutes away from where I live and it's fun to get up in the canyon and do some cooking in a different setting.<\/p>\n

I finally decided on kabobs, but didn't want to take the time to hold them over the campfire and try and cook them, so decided to make the Shish Kabobs <\/a>just like normal but do it in a vegetable basket propped between two logs over the coals. \u00a0Yeah, I know they technically aren't shish kabobs, but it's everything but having them on the skewer.<\/p>\n

I cooked the meat first and then added the veggies. \u00a0I wanted to make sure that the meat got done--probably could have added the vegetables sooner as the meat got quite done. \u00a0And I wished I had let everything marinate longer than I had--I would go at least three hours, which is what I normally do. \u00a0But I had run out of time.<\/p>\n

\"ShishThe shish kabobs off the stick turned out great and we even did some campfire breadsticks<\/a> to go with!<\/p>\n

There are a lot of things you can do with a vegetable basket over the campfire and get that great smoky taste with your food. \u00a0Shish Kabobs off of the skewer are one of them.<\/p>\n
