Coat each of the fillets with the spice mixture.\u00a0 Melt the\u00a0margarine (or butter, if you prefer)\u00a0in an iron skillet over a hot cooking fire. Sear the fish for 1 to 2 minutes on each side, or until they smoke and appear \"blackened\".<\/p>\n<p>Remove the skillet from the fire and cover.
