{"id":1800,"date":"2011-02-04T00:27:03","date_gmt":"2011-02-04T07:27:03","guid":{"rendered":"http:\/\/www.outdoorcookingmagic.com\/?p=1800"},"modified":"2014-06-30T04:10:40","modified_gmt":"2014-06-30T11:10:40","slug":"making-7-horrible-grillingbbqing-mistakes","status":"publish","type":"post","link":"https:\/\/www.outdoorcookingmagic.com\/making-7-horrible-grillingbbqing-mistakes\/","title":{"rendered":"Are You Making These 7 Horrible Grilling\/BBQing mistakes?"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-1354\" style=\"margin: 10px;\" title=\"Grilling the Perfect Steak\" src=\"http:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2010\/10\/iStock_000010808973XSmall-300x225.jpg\" alt=\"Grilling the Perfect Steak\" width=\"228\" height=\"171\" srcset=\"https:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2010\/10\/iStock_000010808973XSmall-300x225.jpg 300w, https:\/\/www.outdoorcookingmagic.com\/wp-content\/uploads\/2010\/10\/iStock_000010808973XSmall.jpg 400w\" sizes=\"auto, (max-width: 228px) 100vw, 228px\" \/>In a recent survey that I did among my email newsletter subscribers, the number one challenge that people had was improving their technique.\u00a0\u00a0 It's hard to improve your technique if you are making some horrible mistakes!\u00a0 Well, maybe horrible is a little strong, but you can definitely make some improvements if you aren't making these mistakes.<\/p>\n<p>So let's talk about some mistakes that are common.\u00a0 Hopefully you aren't make them, but then again, maybe there will be something you hadn't known or thought of.<!--more--><\/p>\n<h2>#1 - You start cooking with meat that isn't totally thawed<\/h2>\n<p><div style=\"float:right;margin:3px\"><a target=\"_blank\" href=\"http:\/\/www.shareasale.com\/r.cfm?b=631169&u=124118&m=52974&urllink=&afftrack=\"><img decoding=\"async\" src=\"http:\/\/www.shareasale.com\/image\/52974\/300x250_cookie_ziplist_green_start_your_.jpg\"  border=\"0\"><\/a><\/div>Your best bet is to bring the meat you are going to cook to room temperature.\u00a0 If you don't have it thawed all the way, then you are going to either have to over-cook it to make sure that the middle gets cooked (but then the outside may be overdone) or you'll under up under-cooking the middle.\u00a0 Do yourself a favor and bring the meat to room temperature before you start.<\/p>\n<h2>#2 - You use lighter fluid to start the charcoal<\/h2>\n<p>Avoid if you possibly can.\u00a0 Using lighter fluid will give some extra flavor to your food-unwanted flavor!\u00a0 Yeah, I know that if you let the charcoal burn down long enough, that may burn off, but do you really want to wait that long?\u00a0 There's definitely other ways to<a href=\"http:\/\/www.outdoorcookingmagic.com\/start-charcoal-briquets\/\"> light charcoal<\/a> that don't require lighter fluid.\u00a0 So give those a try and see if it doesn't make a difference.<\/p>\n<p>While we are on that subject, avoid the charcoal that has lighter fluid already soaked in the charcoal--it will give an taste also and I've always found that the coals don't last nearly as long.<\/p>\n<h2>#3 - You have the heat too hot or too cold<\/h2>\n<p>Seems obvious, doesn't it?\u00a0 But what type of cooking are you trying to do?\u00a0 If you are bbqing, then you cook low and slow, so don't have that temperature up to high.\u00a0 Ribs and brisket are much better when bbqed--low and slow.<\/p>\n<p>Steak and hamburgers, on the other hand, are better started out hot to sear in the juices, and then moved to a cooler part of the grill to complete cooking.<\/p>\n<h2>#4 - Using the wrong kind of wood for smoking<\/h2>\n<p>If you are doing bbqing (or you can do this if grilling), make sure that you are using the right kind of wood.\u00a0 Never use soft woods, such as pine.\u00a0 It will just cause creosote to collect on your food.\u00a0 Green wood is best left alone also.\u00a0 Use aged hardwood, fruit wood, or nut wood.\u00a0 Make sure that it is well aged.\u00a0 That will give you the right amount of smoke and the right flavor.<\/p>\n<h2>#5 - Using mops or sauces too early<\/h2>\n<p>If your mop or sauce as sugar in it, it will burn if you put it on the meat too early.\u00a0\u00a0 Leave it until later in the cooking cycle when the temperatures should be lower and the sauce won't be on long enough to burn.<\/p>\n<h2>#6 - You keep lifting the lid<\/h2>\n<p>If you keep lifting the lid to check the meat, you just drop the temperature in the grill and it has to reheat up.\u00a0 If you are really anxious about the temperature, get a <a href=\"http:\/\/www.outdoorcookingmagic.com\/bbq-thermometers\/\">bbq thermometer<\/a> (you can even get a wireless one that will allow you to monitor the grill and meat temperature from a loooong way away.<\/p>\n<h2>#7 - You poke the meat to see if it is done<\/h2>\n<p>Every time you poke the meat, you make a hole to allow the juices to run out.\u00a0 The best way to kow if the meat is done is to use a <a href=\"http:\/\/www.outdoorcookingmagic.com\/bbq-thermometers\/\">thermometer<\/a>!<\/p>\n<h2>BONUS - You start eating the meat as soon as it comes of the grill<\/h2>\n<p>As you grill most meats, the moisture makes its way to the surface of the meat.\u00a0 You need to let the meat rest for a few minutes after you take it off the grill to allow the juices to redistribute themselves.
