This would be 6-8 coals underneath and 10-12 on top. Since this is going to cook for a long time, you'll need to replenish the coals at least every hour.<\/li>\n<li class=\"instruction\">When done, remove the brisket from the foil and put it on a warmed serving platter. Make a thin gravy with the flour, juice, and salt and pepper. Pour the gravy over brisket before you serve it.
