A Dutch oven is perfect for this type of cooking since it holds the heat so well.<\/p>\n<h4>French Style Roast Beef #1<\/h4>\n<address>3 lb Boneless chuck or rolled rump roast<\/address>\n<address>6 whole cloves<\/address>\n<address>1 bay leaf<\/address>\n<address>4 c water<\/address>\n<address>2 med. onions, quartered<\/address>\n<address>2 med. stalks celery, cut into 1\" pieces<\/address>\n<address>1 tsp salt<\/address>\n<address>5 peppercorns<\/address>\n<address>1 large clove, garlic<\/address>\n<address>4 med. carrots cut into quarters\u00a0<\/address>\n<address>2 med. turnips cut into quarters<\/address>\n<p>Place beef roast, salt, thyme, clove, peppercorns, bay leaf and garlic in Dutch oven, add water. Heat to boiling.\u00a0 Reduce heat (remove some of the coals underneath) and simmer, covered, for 2-1\/2 hours. Add all the remaining ingredients. Cover and simmer until beef and vegetables are tender, about 30 min. Remove beef and vegetables. Cut beef into 1\/4\" slices. Strain broth and serve with beef and vegetables.<\/p>\n<p>&nbsp;<\/p>\n<h4>French Style Roast Beef #2<\/h4>\n<address>3 lb boneless chuck or\u00a0rump roast<br \/>\n4 whole cloves<br \/>\n1 bay leaf<br \/>\n4 c water<br \/>\n2 medium onions, quartered<br \/>\n2 medium stalks celery, cut into 1\" pieces<br \/>\n1 tsp salt<br \/>\n4\u00a0peppercorns<br \/>\n1 large clove, garlic<br \/>\n4 carrots cut into quarters<br \/>\n2\u00a0turnips cut into quarters<\/address>\n<address>\u00a0<\/address>\n<p>Put the beef roast, salt, thyme, clove, peppercorns, bay leaf and garlic in Dutch oven.\u00a0 Add the water. \u00a0Heat until it is\u00a0boiling, then reduce heat by removing some of the coals and simmer covered for 2 1\/2 hours.\u00a0 Now add remaining ingredients. Cover the Dutch oven and simmer until beef and vegetables are tender.\u00a0 This should take about\u00a030 minutes.\u00a0 Remove beef and vegetables. Cut beef into 1\/4\" slices.
